There is so much interesting information about choosing the right durian when you approach a market stall or a street vendor. Unlike many fruits you know that do not demand knowing more than firmness color and smell, and although picking the right durian, these things are also relevant (more information about that below), durian has more depth of rich criteria for it - fitting for the king of fruits!
In this guide, you will have everything you need to know about picking the right on for you, so let's get into it!
If the durian is very big, it typically means that Proportionally it has more husk, not flesh. Which means, you will get less of a value from your money. You might think you will get more edible flesh for a bigger weight durian, and the ratio changes to your favor proportionally, but it's just not how it is!
If you consider spending less money and get a small durian, just know I you might get less durian taste too. If the durian is smaller than it uses to be, it can be a red flag that the farmer cut it out earlier from the tree before the fruit got to it's natural ripeness, which can be a sign for its flesh to be to firm and lacking flavor.
Other than that, the amount of edible flesh in smaller durians may be smaller even than what it looks from first glance, because the small durians has a lot of husk mass and weight as well as the durians with the substantial size; they usually weight more than it may seem, and it is mostly because of the husk!
You're traveling in a Southeast Asian country and all of a sudden, you're smelling that fragrant, powerful, exotic, eccentric extravagant
(so many possible adjectives, I know right?) smell, because you know, you smell this fruit before you see it! Some people would say durian has a "bad" smell... Weird, I know, right?
But anyways, you notice that durian street vendor, and you desire getting a piece of your own, and you have to many to choose from, and you want to have the best pic for one with the rich taste. In here you'll have everything you need to know, so you don't have to be unpleasantly surprised!
Actually, yes! Regarding the development of the pods (flesh), oddly lopsided or flat durians often have underdeveloped or fewer pods inside. This is something well worth remembering when picking out of varieties that come in inconsistent shapes, like Monthong, Cannee or Sultan. For varieties like Musang King and Black Thorn, the shape is way more consistent and you won't experience a taste difference from it.
There is no specific weight for every durian, it depends on the variety. Since each durian variety has its own common weight range, knowing the right sweet spot weight of the curtain variety that your getting is highly recommended.
Rule of thumb for the best range to have in mind - is slightly above average weight for the variety that your'e looking for.
A ripe durian will provide some great aroma. When you want to check a specific one, you can catch a whiff at the bottom of the fruit - if it has a strong, sweet smell, it is ripe.
If it doesn't have any smell, it's unripe.
Have in mind, not every smell from a durian is a good sign obviously, a strong smell of sourness or fermentation, you should avoid from purchasing that - it's most likely overripe or even rotting.
Shaking a durian you want to check its ripeness is a great idea.
Inside a ripe durian, the flesh has loosen up from the inner white shell, and the air space has folded up. In addition, the seeds themselves have air pockets around them, caused by moisture and sugar change as durian goes ripe.
So you can take a cloth and grab a durian, and if you shake it and you hear and feel a soft knock, it's a sign for ripeness. If it's not making a sound it's probably not rip yet, and a strong sound of rattling indicate it to be overripe.
As for durian size, it should effect your choice as well.
small Durian is not recommended either
Here's some useful chart to look at before you see the weight of the durian you want while standing in front of the vendor!
If you're the fully (but not overly) ripe durian type of person, small natural cracks near the seam can be a good sign the fruit has soft, rich and delicious flesh inside of it. Just try avoiding the ones with big cracks as they can indicate overly ripe or rot.
Do I need to look at the shape?
